Emanuele and Cesira Rolfo are 3rd generation family wine makers from Roero, a small area in Piedmonte at the north of the river Tanaro. Their winery is called  Ca di Caire named after Emanuele's monther's family name and has been producing wine since the 1900s.

VARIETAL GRAPE: Arneis.

TYPE OF SOIL: Loose and potentially sandy.

HARVESTING PERIOD: Before the end of September.

VINIFICATION: In white: grapes are loaded whole in the pneumatic press and the solo must of to drip is started to the alcoholic fermentation to temperature checked of 17 °C previous addition of selected yeasts; after two days of fermentation is decanted in barrel of wood and here it remains you for 4 / 5 months; to the term of the alcoholic fermentation periodically the is performed batonage for the maximum transfer of noble substances to the wine.

COLOR: Yellow pale yellow load, almost gilded.

AROMA: Intense, floral, of spices, characteristic.

TASTE: Round and harmonic, full, balanced, savory 

PAIRING: Delicate, appetizers generally and fish particularly, rice and white meats.
